You know how some mornings simply start later than others, and suddenly you’re almost late for work? There is nothing I prefer better than an easily prepared take-away paleo smoothie shake as breakfast. I throw some strawberries, nuts, and oats in my mixer, and I am ready to leave the house in 2 minutes.
Ingredients (serves 4)
- 6 strawberries
- 1/2 banana
- a handful of walnuts
- 1/2 cup oats
- 6-8 oz coconut milk
- 1 tsp coconut oil

*Total Fat – 19g of which saturated fats – 10 g
*Protein – 4g
*Carbs – 15 g of which sugars – 4g
*Fiber: – 3g
Other than the macronutrients, this smoothie shake is rich in vitamin C, pyridoxine (B6), omega-3, manganese, iron, selenium. I almost forgot the dietary fibers!
You might be worried because of the high level of saturated fats coming from all the coconut products used. But according to BBC Good Food and Dr.Axe coconut milk and oil acts contradictory of the popular claims when it comes to saturated fats.
Coconuts’ fatty acids are primarily saturated fats, but don’t think these will raise your cholesterol levels and cause heart damage.
